Chicken, Kale, Bean Minestrone Soup

So let me just say before you scroll to the recipe, this is not a classic minestrone soup and does not contain any noodles! but you can obviously always add them in at the end if thats what you’re after 😉

Chicken Broth:

  • 1 pot of water
  • 1 chicken carcass
  • 3 bay leaves
  • 5 sage leaves
  • 2 sprigs of rosemary
  • salt
  • pepper
  • tumeric

Soup Ingredients:

  • 1 can tomato paste
  • 2 -3 cups of Chicken or Sausage
  • 3 carrots
  • 1 onion
  • 3 stalks of celery
  • 2 -3 hand fulls of kale
  • 4 cloves of garlic
  • 1/2 can of black beans or kidney beans
  • more salt! jk, taste it first

I just throw every thing in together once the broth is done (i usually boil for a couple of hours) strain the content out of the broth. Add your soup ingredients to the broth and then once the carrots are tender to your liking I turn off the heat. Happy souping!

Gluten Free, Sour Cream, Apple Pie Muffins

Preheat Oven To 350°

Bake Time: 30 – 35 Minutes

Makes 12 Muffins

  • Muffin Batter
  • 1 Cup Sour Cream
  • 2 Eggs
  • 1/2 Cup Coconut Oil
  • 1 Tsp Vanilla Extract
  • 1/2 White Sugar
  • 2 Tsp Cinnamon (or to taste)
  • 1 Tsp Baking Soda
  • 1 Tsp Baking Powder
  • 1/4 Tsp Salt
  • 1 1/2 Cups Oat Flour
  • 1/2 Cup Coconut Flour
  • 2 Cups Diced Apple

Muffin Topping

  • 1 – 2 Apples Diced
  • 1 1/2 Tsp Cinnamon
  • 4 Tbsp Brown Sugar
  • Dab of butter on each muffin top

In a large bowl mix together all of your wet ingredients (sour cream, eggs, coconut oil, vanilla extract). Add dry ingredients until mixed together. Fold in your diced apple.

Fill each muffin liner with batter and place in muffin tin. Spread topping mixture evenly onto muffins and dab with a blot of butter.

Bake at 350° for 30 minutes or until golden brown. Poke middle of muffin with toothpick, fully baked once toothpick comes out clean with no batter.

If you’re in search of a week by week guide for pregnancy and childbirth, I would highly recommend this book by Mama Natural / Genevieve Howland. I have found this book to be super helpful & insightful along with her witty sense of humor has made this a fun read as well and informative.

Asian Beef Tenderloin Kabob Marinade & Lemon, Dill, Garlic Potatoes.

Beef Kabob Ingredients:

  • 2 beef tenderloin
  • 1/2 cup vegetable oil
  • 1/2 cup sesame oil
  • 1/3 cup soy sauce
  • 2 tbsp grated ginger
  • 2 cloves garlic, chopped
  • 1/3 cup sugar
  • 1/2 lemon, squeezed/juiced
  • Salt & Pepper

Beef Kabob Prep:

  1. Trim any fat from the beef tenderloin & cut into preferred kabob bite size.
  2. Mix oils, soy sauce, grated ginger, chopped garlic, sugar & squeezed lemon, salt & pepper to taste.
  3. Add beef pieces to your marinade, toss thoroughly so pieces are coated & let marinate for 40 – 60 minutes.
  4. Once beef is done marinating , add to skewers and grill until preferred tenderness. (I grill mine on medium for around 7 minutes, flipping halfway).

Potato / Dill, Garlic, Lemon Butter Ingredients:

  • 12 baby potatoes, halved
  • 1/2 lemon, squeezed/juiced
  • 1 clove garlic, chopped
  • 3 tbsp fresh dill, chopped
  • 4 tbsp butter
  • Olive oil
  • Salt & Pepper

Prep:

  1. Turn oven to 450*
  2. Chop potatoes in half, douse with olive oil, toss with salt & pepper and roast in oven for 30 minutes.
  3. In a pot on the stove at low heat melt your butter, dill, lemon juice and garlic together.
  4. Once potatoes are done, toss in your butter mix and serve.

Stuart’s Quality Baked Goods

Whilst down in Granville Islands at the Market, as there are way too many things to choose from which becomes very overwhelming, we decided to pick up a couple tarts before heading back to our hotel.

I didn’t try the key lime tart because I am not much of a sweet tooth myself, however I did try the blueberry tart and it wasn’t overly sweet and had a really nice texture to it. I think the presentation of the tart’s honestly speak for themselves! Delicious.
